Not Your Classic Sour
Trust me, I’m a bartender.
A traditional whiskey sour normally contains whiskey, lemon juice, simple syrup, and an egg white that creates a rich foamy head.
Our version skips the booze and egg, but still has the same frothy effect with the use of a vegan substitute.
This Grapefruit Thyme NA Sour is balanced and elegant. She’s sweet without being juicy, slightly acidic without being tart, and a slight bitterness that almost mimics that alcohol taste.
What I love most about this mocktail is that it gives the illusion of a classic cocktail from a high-end bar, and it’s super easy to recreate at home 🙂

Grapefruit Thyme NA Sour Mocktail
Key Ingredients
Grapefruit Juice
My job carries Ocean Spray, which is more sweet than tart. If you are opting for fresh-squeezed, I would suggest adding 1/2 fl oz more simple syrup and 1/4 fl oz less lemon juice to balance the acidity and sweetness.
Thyme Infused Simple Syrup
The recipe is simple: Boil 1 cup of water, 1 cup of sugar, and 10-12 sprigs of fresh thyme. Stir to dissolve sugar, steep until it cools. Store in your fridge for up to a week.
Lemon Juice
This recipe doesn’t call for much. You can simply use a lemon wedge if you don’t have bottled lemon juice on hand.
Aquafaba
AKA water from a chickpea/ garbanzo bean can, creates a frothing effect similar to an egg white. It is completely tasteless, and a little goes a long way. Each cocktail takes 0.25 fl oz of aquafaba. Once it is dry shaken, the cocktail will aerate and become frothy.
Dry Shake
When working with aquafaba or egg white cocktails, it is key that you dry shake, meaning to shake without ice.
For this recipe, I dry shook it before adding ice. I strained the cocktail back into the shaker, and dry shook it again before serving.
You are going to want to double strain the cocktail for optimum smoothness.
Presentation
Best served Up
This mocktail should be served without ice to showcase its frothy crown. If you prefer it on the rocks, to each their own. I like to servce it in a chilled Coupe glass or a Nick & Nora Glass.

Grapefruit Thyme NA Sour Mocktail Recipe
Yields 2
- 6oz Grapefruit Juice
- 0.5oz Fresh Lime Juice
- 2oz Thyme-Infused Simple Syrup
- 0.5oz Aquafaba
Add ingredients into a shaker with no ice. Close the shaker and dry shake before adding ice. Shake again with ice and strain cocktail back into the shaker. Dump the used ice and dry shake once more. Double strain into a chilled Coupe or Nick & Nora glass.
