Key Ingredients

Seedlip Non-Alcoholic Spirits

What separates this drink from a garnished soda is the Seedlip Non-alcoholic Spirit. Seedlip makes zero-proof botanical spirits that capture the garden essence of each flavor. They strive to bring mocktails to the next level by offering unique and sophisticated boozeless alternatives for a healthier lifestyle.

For this recipe, I used their Grove 42 Flavor, which is similar to a citrussy light liquor like vodka, rum, or gin. Since lime is a key ingredient in a classic Moscow Mule, the bright citrus essence pairs beautifully with the ginger beer.

The lime juice can either be bottled or freshly squeezed, both of which can be found at your local grocery store.

I also incorporated fresh mint to accent the acidity of this mocktail.

Cucumber Simple Syrup

For the Simple Syrup, I infused it with cucumbers that I salvaged from my fridge after a weeklong vacation.

(I hate to let food go to waste!)

The recipe is super simple and can be used for a variety of different cocktails and mocktails.

Ginger Beer

You can opt for any ginger beer of your choice. I went with Fever Tree Bold & Spicy Ginger Beer because I like the portioning and the zesty kick that it gives. Each of the 5.07 fl oz cans perfectly tops your tall Moscow Mules.

Pro-Tip: You can substitute Club Soda for a Cucumber Mint Mojito!

This drink also works with ginger ale, lemon-lime soda, or any light soda pop of your choice 🙂

Combine Seedlip Non-alcoholic Spirits in Grove 42, Cucumber Simple Syrup, most of the mint leaves (save the tops for garnish), and fresh lime juice into a cocktail shaker with ice. Shake until a light frost forms on your chilled cocktail shaker. In a tall glass, dump the shaker contents over ice. Top with Ginger Beer. Lightly stir to incorporate the bubbles and flavors. Garnish with mint sprig and lime slice.
